- Dice your chosen vegetables, such as carrots and potatoes, to about 1-inch pieces. Place them at the bottom of your crockpot.
- Season your chicken with salt and pepper. Place the seasoned chicken on top of the vegetables.
- Combine melted butter and minced garlic in a small bowl. Pour this mixture evenly over the chicken.
- Cover your crockpot and cook on the low setting for 6–7 hours or on high for 3–4 hours.
- If desired, stir in heavy cream or cream cheese about 15–20 minutes before serving.
- Carefully spoon the chicken and vegetables onto serving plates and serve with rice, mashed potatoes, or crusty bread.
