- Preheat your oven to 350°F (175°C) and line a 9×9” baking pan with aluminum foil, greased to prevent sticking.
- Cream the softened unsalted butter and brown sugar until light and fluffy for about 2-3 minutes.
- Beat in one egg and vanilla extract, then add baking soda and salt and mix until combined.
- Gradually add all-purpose flour, mixing just until combined, then fold in quick cooking oats.
- Press half of the oat mixture into the bottom of the prepared baking pan, creating an even layer.
- Warm the dulce de leche in the microwave until smooth, then drizzle over the oat base, leaving a border.
- Crumble the remaining oat mixture over the dulce de leche filling and gently pat down.
- Bake in the preheated oven for 23-28 minutes until the top is golden brown and the center jiggles slightly.
- Cool completely in the pan for 30 minutes to an hour before slicing into squares.
