  • 200 g Self-Raising Flour or gluten-free flour blend

For the Fruit Topping
  • 6 Halved Apricots or replace with other fruits

  • 50 g Icing Sugar for dusting

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 180℃ (350℉) and grease a stoneware dish.
  2. Cream the butter and caster sugar together until light and fluffy (about 3-4 minutes).
  3. Gradually add the eggs one at a time, mixing until smooth.
  4. Fold in the self-raising flour, ground almonds, and baking powder until just combined.
  5. Pour the batter into the prepared stoneware dish and smooth the surface.
  6. Press the halved apricots into the batter with cut sides facing up.
  7. Bake in the oven for 35-40 minutes until golden brown and a skewer comes out clean.
  8. Allow to cool for 10-15 minutes, then dust with icing sugar before serving.
