Ingredients
  

For the Taco Filling
  • 1 pound ground beef can substitute with turkey or plant-based protein
  • 1 onion diced; any variety works
  • 1 cup bell peppers diced; any color, can be omitted
  • 1 tablespoon chili powder adjust for heat preference
  • 1 teaspoon cumin a little goes a long way!
For the Egg Mixture
  • 6 eggs can use egg substitutes for lower cholesterol
  • to taste salt
  • to taste pepper
For Assembly
  • 8 corn tortillas whole wheat or gluten-free options available
  • 1 cup shredded cheddar cheese can substitute with Monterey Jack or dairy-free

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook 1 pound of ground beef, breaking it apart until browned, about 5-7 minutes. Add 1 diced onion and 1 cup of diced bell peppers, stirring occasionally until softened, about 3-4 minutes.
  3. Once cooked, add 1 tablespoon of chili powder, 1 teaspoon of cumin, and season with salt and pepper to taste, stirring for 1 minute.
  4. In a separate bowl, whisk together 6 eggs with a pinch of salt and pepper.
  5. In a 9x13-inch baking dish, arrange 8 corn tortillas and spoon the beef mixture evenly. Pour the egg mixture over the filling.
  6. Sprinkle 1 cup of shredded cheddar cheese over the top.
  7. Bake for 20-25 minutes until eggs are set and cheese is bubbling.
  8. Allow to cool for 5 minutes, then cut into squares or wedges and serve.
