Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook 1 pound of ground beef, breaking it apart until browned, about 5-7 minutes. Add 1 diced onion and 1 cup of diced bell peppers, stirring occasionally until softened, about 3-4 minutes.
- Once cooked, add 1 tablespoon of chili powder, 1 teaspoon of cumin, and season with salt and pepper to taste, stirring for 1 minute.
- In a separate bowl, whisk together 6 eggs with a pinch of salt and pepper.
- In a 9x13-inch baking dish, arrange 8 corn tortillas and spoon the beef mixture evenly. Pour the egg mixture over the filling.
- Sprinkle 1 cup of shredded cheddar cheese over the top.
- Bake for 20-25 minutes until eggs are set and cheese is bubbling.
- Allow to cool for 5 minutes, then cut into squares or wedges and serve.
