Prepare the Blueberry Syrup
- In a medium saucepan, combine 1 cup of blueberries, the zest of one lemon, 0.5 cup of sugar, and 1 cup of water. Heat over medium, stirring for 5-7 minutes until blueberries soften.
- Remove from heat and let the syrup cool for 10-15 minutes.
- Strain the syrup through a fine mesh strainer into a bowl, pressing with a spoon to extract liquid.
- In a pitcher, mix strained syrup with 4 cups of cold water and 0.5 cup of fresh lemon juice. Stir thoroughly.
- Chill in the refrigerator for at least 30 minutes, then serve over ice and garnish.
