Step-by-Step Instructions for Calamari with Tomato Sauce
- In a large saucepan, heat 3 tablespoons of olive oil over medium heat for about 2–3 minutes.
- Add 3 sliced cloves of garlic to the heated oil and sauté for about 1–2 minutes until fragrant.
- Stir in a 28-ounce can of tomato puree, 28 fluid ounces of water, and ½ cup of red wine, along with 1 teaspoon of salt, 1 teaspoon of white sugar, and crushed red pepper.
- Allow the sauce to come to a gentle boil, then reduce the heat to low and let it simmer uncovered for 30 minutes.
- While the sauce simmers, bring a large pot of salted water to a boil and cook a 16-ounce package of linguine for 8–10 minutes.
- Once the sauce has simmered, add 3 pounds of cleaned and sliced squid, stirring to coat the calamari in the sauce and cook for an additional 15 minutes.
- Serve the calamari over the prepared linguine and garnish with fresh herbs if desired.
