Step-by-Step Instructions for Calamari with Tomato Sauce
  1. In a large saucepan, heat 3 tablespoons of olive oil over medium heat for about 2–3 minutes.
  2. Add 3 sliced cloves of garlic to the heated oil and sauté for about 1–2 minutes until fragrant.
  3. Stir in a 28-ounce can of tomato puree, 28 fluid ounces of water, and ½ cup of red wine, along with 1 teaspoon of salt, 1 teaspoon of white sugar, and crushed red pepper.
  4. Allow the sauce to come to a gentle boil, then reduce the heat to low and let it simmer uncovered for 30 minutes.
  5. While the sauce simmers, bring a large pot of salted water to a boil and cook a 16-ounce package of linguine for 8–10 minutes.
  6. Once the sauce has simmered, add 3 pounds of cleaned and sliced squid, stirring to coat the calamari in the sauce and cook for an additional 15 minutes.
  7. Serve the calamari over the prepared linguine and garnish with fresh herbs if desired.
