Ingredients
  

For the Salad
  • 8 ounces corkscrew-shaped pasta any pasta shape can be used
  • 2 cups chopped rotisserie chicken or leftover grilled chicken
  • 6 slices crispy cooked bacon or turkey bacon
  • 1 cup cubed Muenster cheese or substitute with cheddar or mozzarella
  • 1 cup chopped celery or use chopped bell peppers
  • 1 cup chopped green bell pepper can mix colors or omit
  • 1 cup cherry tomatoes or grape or diced regular tomatoes
  • 1 medium avocado add just before serving
For the Dressing
  • ½ cup Italian-style salad dressing homemade dressing recommended
  • ½ cup mayonnaise or use low-fat mayo or Greek yogurt

Method
 

Preparation Steps
  1. Bring a large pot of salted water to a boil over medium-high heat. Add the corkscrew-shaped pasta and cook for about 8-10 minutes, or until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine Italian-style salad dressing and mayonnaise. Whisk until smooth and creamy.
  3. Add the cooled pasta to the bowl with the dressing. Toss in the chicken, bacon, cheese, celery, bell pepper, tomatoes, and avocado. Stir gently.
  4. Cover the bowl and chill in the refrigerator for at least 30 minutes.
  5. Serve the chilled salad, optionally garnished with extra avocado or fresh herbs.
