Ingredients
  

For the Parsley Pesto
  • 1 bunch Flat Leaf Parsley
  • 2 cups Baby Spinach can substitute with kale or more parsley
  • 2 tablespoons Lemon Juice fresh is preferred
  • 1 tablespoon Toasted Pine Nuts for the pesto
  • 3 tablespoons Toasted Pine Nuts for topping
  • 1 clove Garlic can replace with garlic powder
  • 1/4 cup Grated Parmesan Cheese nutritional yeast is a suitable vegan alternative
  • 1/2 cup Olive Oil can substitute with any neutral oil
  • to taste Salt
  • to taste Black Pepper
For the Salad
  • 2 cups Shredded Rotisserie Chicken can substitute with grilled chicken or tofu
  • 1 cup Shelled and Cooked Edamame canned chickpeas can be used if necessary
  • 1 cup Chickpeas can substitute with other legumes
  • 2 cups Chopped Cucumber any crisp cucumber variety works
  • 4 cups Arugula can substitute with baby kale or mixed greens

Method
 

Preparation
  1. Step 1: In a food processor, combine the flat leaf parsley, baby spinach, lemon juice, 1 tablespoon of toasted pine nuts, grated Parmesan cheese, garlic clove, salt, and pepper. Blend on high for about 30 seconds until smooth.
  2. Step 2: With the processor running, slowly drizzle in the olive oil over 30 seconds. Continue blending until the pesto is smooth, about another 30 seconds.
  3. Step 3: In a large mixing bowl, add the shredded rotisserie chicken, cooked edamame, chickpeas, and chopped cucumber. Toss gently to combine.
  4. Step 4: Spoon the prepared parsley pesto over the chicken mixture and toss everything together until evenly coated.
  5. Step 5: On individual plates, place a generous handful of arugula as the base. Top with the chicken mixture and garnish with the remaining 3 tablespoons of toasted pine nuts.
