Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly until the mixture becomes slightly sticky.
  2. Wet your hands and form the mixture into small oval-shaped koftas, about 2 inches long. Set aside on a plate while you preheat the grill.
  3. Preheat your grill to medium-high heat (around 400°F / 200°C). Lightly brush the grill grates with olive oil.
  4. Place the koftas on the preheated grill, spacing them apart. Grill for about 10-12 minutes, turning occasionally, until golden brown and cooked through.
  5. While the koftas are grilling, prepare the garlic yogurt sauce. In a separate bowl, combine the yogurt, lemon juice, and a pinch of salt, stirring until smooth.
  6. Once the koftas are done grilling, let them rest for a couple of minutes. Serve alongside the garlic yogurt sauce.
