  • 1/4 cup Rice Vinegar substitute with apple cider vinegar for a milder flavor
  • 1 tbsp Orange Zest freshly grated zest is ideal
  • 1 cup Orange Juice can replace with extra rice vinegar or lemon juice
  • 2 tbsp Honey use maple syrup for vegan option
  • 1/4 cup Avocado Oil vegetable or canola oil can be a substitute
  • 2 tbsp Toasted Sesame Seed Oil best not to substitute for authenticity
  • 2 tbsp Reduced-Sodium Soy Sauce tamari is a gluten-free option
  • 1 tbsp Fresh Ginger (grated) fresh is best, powdered can be backup
  • 1 tbsp Toasted Sesame Seeds optional but highly recommended
For the Salad
  • 4 cups Romaine Lettuce Napa cabbage makes a tasty substitute
  • 1 cup Shredded Cabbage mix red and green for visual appeal
  • 2 cooked chicken breasts shredded rotisserie chicken simplifies prep time
  • 1 can Mandarin Oranges (drained) fresh segments or canned pineapple are alternatives
  • 1 cup Shredded Carrots swap with firm veggies like bell peppers if desired
  • 1/2 cup Salted Cashews use peanuts or omit for nut-free
  • 1/2 cup Dried Cranberries raisins can be used if cranberries are hard to find
  • 1 cup Crispy Wonton Strips crushed ramen noodles or peanuts can be used

Method
 

Preparation Steps
  1. In a jar, combine rice vinegar, orange zest, orange juice, honey, avocado oil, toasted sesame seed oil, soy sauce, ginger, sesame seeds, and a pinch of salt and pepper. Secure the lid and shake vigorously for about 30 seconds until smooth.
  2. Bring a large pot of salted water to a boil, add chicken, and boil for 15-20 minutes until cooked; internal temperature should reach 165°F (75°C). Drain and cool before shredding.
  3. In a large salad bowl, combine chopped romaine, shredded cabbage, shredded chicken, mandarin oranges, shredded carrots, salted cashews, and dried cranberries. Toss gently.
  4. Drizzle the ginger sesame dressing over the salad, starting with half and tossing to coat. Add more dressing if desired.
  5. Top with crispy wonton strips and extra sesame seeds. Serve immediately.
