- Make the ‘Honey’ Mustard Sauce: Whisk together the neutral oil, agave or maple syrup, and mustard. Add salt and pepper to taste, then set aside.
- Prepare Tofu: Drain and press the extra firm tofu for about 10 minutes, then slice into 1-inch strips.
- Make the Batter: Combine the flour, cornstarch, baking powder, salt, and optional paprika. Gradually stir in water for a smooth batter.
- Coat Tofu: Dip the tofu strips in the batter, then roll in panko breadcrumbs and place on a lined baking sheet.
- Bake: Preheat the oven to 350°F (175°C) and bake the tenders for 30-35 minutes, flipping halfway through.
- Add Sauce: Brush each tender with the ‘honey’ mustard sauce and bake for an additional 5-8 minutes.
