Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix light brown sugar, cornstarch, and cinnamon.
  3. Slice the fresh peaches and toss them with the sugar mixture.
  4. Line a baking sheet with parchment paper and roll out the puff pastry.
  5. Arrange the peach mixture in the center of the pastry.
  6. Fold the edges of the pastry over the peach filling.
  7. Brush the edges with the beaten egg and sprinkle with coarse sugar.
  8. Bake for about 25 minutes, until golden.
  9. Cool for a few minutes, dust with powdered sugar, and serve.
