Tzatziki
  • 1 cup Greek Yogurt Dairy-free yogurt for vegan option.
  • 1 medium Cucumber Grated, excess moisture removed.
  • 2 tablespoons Dill Traditional herb for flavor.
  • 2 tablespoons Fresh Mint Optional, enhances flavor.

Method
 

Preparation
  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, paprika, onion powder, and salt and pepper to taste.
  2. Add chicken cubes to the marinade, ensuring each piece is coated. Cover and refrigerate for at least 1 hour or up to 4 hours.
  3. Prepare tzatziki sauce by grating cucumber and mixing it with Greek yogurt, minced garlic, lemon juice, olive oil, dill, and mint. Refrigerate for at least 30 minutes.
  4. If using wooden skewers, soak them in water. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken onto skewers and place them on the grill, turning every few minutes until cooked through to 165°F.
  6. Remove from grill and let rest for about 5 minutes before serving with tzatziki and choice of sides.
