Method
 

Step-by-Step Instructions
  1. Preheat your grill or panini press to medium heat, about 375°F (190°C).
  2. Combine sliced zucchini, bell pepper, and eggplant in a bowl. Drizzle with olive oil and vinegar, add minced garlic, sea salt, and black pepper. Toss well.
  3. Grill the vegetables for 5-7 minutes until tender and charred, or 4-5 minutes in a panini press.
  4. Spread a layer of hummus or avocado spread on one side of each slice of bread.
  5. Assemble the panini with grilled veggies and spinach, topping with another slice of bread, spread side down.
  6. Grill the assembled panini for 4-5 minutes in a press or 3-4 minutes per side on a grill.
  7. Let the panini cool for a minute, slice diagonally, and serve warm.
