Step-by-Step Instructions
  1. In a food processor, combine the unsweetened finely shredded coconut, melted coconut oil, maple syrup, vanilla extract, and a pinch of sea salt. Blend for about 40 seconds until a sticky mixture forms.
  2. Firmly press the coconut mixture into a mini muffin pan, filling each crevice evenly to create bite-sized treats.
  3. In a microwave-safe bowl, combine the chopped chocolate and optional coconut oil. Heat in short intervals of about 30 seconds, stirring in between until melted and smooth.
  4. Spoon melted chocolate over each coconut mound, ensuring an even layer that completely covers the mixture. Place a raw almond in the center of each mound.
  5. Transfer the muffin pan to the freezer and let the bites chill for 3 to 4 hours until firm.
