Step-by-Step Instructions
  1. In a large skillet over medium heat, add 1 pound of ground chicken. Cook for 5-7 minutes until browned and cooked through.
  2. Stir in 4 cloves of minced garlic, ¾ cup of sun-dried tomatoes, 2 teaspoons of Italian seasoning, 2 teaspoons of paprika, ½ teaspoon of kosher salt, and 1 teaspoon of pepper. Sauté for about 2 minutes.
  3. Add 1 cup of uncooked orzo pasta and 2 ¾ cups of broth. Cover and bring to a gentle boil. Cook for approximately 12 minutes, stirring occasionally.
  4. Pour in 1 can of full-fat coconut milk and stir. Add 2 cups of spinach. Cook for an additional 3-5 minutes until the spinach softens.
  5. Remove from heat, taste and adjust seasoning as needed. Serve hot.
