  • 1/2 cup Red Onion Sliced thinly
For the Dressing
  • 3 tablespoons Olive Oil Extra virgin recommended
  • 1 tablespoon Lemon Juice Fresh-squeezed
  • 1 tablespoon Dijon Mustard Or honey mustard
  • to taste Salt
  • to taste Pepper
Optional Toppings
  • 1/2 cup Feta Cheese Or goat cheese
  • 1/4 cup Fresh Herbs e.g., parsley, basil
  • 1/4 cup Nuts or Seeds e.g., sunflower seeds or toasted almonds

Method
 

Steps
  1. Prepare the Chicken: Poach the chicken breasts in seasoned water for about 15-20 minutes or until cooked through.

  3. Prepare the Vegetables: Wash and slice the mixed greens, cucumbers, cherry tomatoes, and red onion.
  4. Make the Dressing: Whisk together olive oil, lemon juice, and Dijon mustard; season with salt and pepper.
  5. Combine the Ingredients: Mix diced chicken and lentils with the vegetables, drizzle with dressing, and toss.
