- In another bowl, whisk together the egg, maple syrup, and melted butter or coconut oil until smooth.
- Gently pour the wet ingredients into the dry mixture, folding them together.
- If adding chocolate chips, fresh berries, or lemon zest, fold these into the dough gently.
- Scoop the dough into mounds, about 2 tablespoons each, and place on the prepared baking sheet.
- Bake for 15-18 minutes until golden brown and firm to the touch.
