Step-by-Step Instructions for Layered Strawberry Yogurt Popsicles
- Wash 1½ cups of fresh strawberries, blend with 2 tablespoons of honey and lemon juice until smooth. Set aside.
- Combine 1 cup of vanilla Greek yogurt with 2 tablespoons of honey and a few drops of vanilla extract. Mix well.
- In a large bowl, mix granola with 2 tablespoons of melted coconut oil and 2 tablespoons of honey. Optionally add white chocolate chips.
- Press the granola mixture into the bottom of the popsicle molds, pour vanilla yogurt layer halfway, and tap to remove air bubbles.
- Top with strawberry yogurt mixture, leaving ¼ inch for expansion. Insert popsicle sticks and freeze for at least 4 hours.
- Remove from freezer, run warm water over the molds, pull on popsicle sticks to remove and serve immediately.
