Method
 

Step-by-Step Instructions
  1. Cook the pasta in a large pot of salted water until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. In a skillet, cook ground beef over medium heat until browned, about 5-7 minutes. Drain fat and stir in taco seasoning with 1/4 cup water; simmer for 3-5 minutes.
  3. Chop vegetables: dice cherry tomatoes, chop bell pepper, and finely dice red onion. Set aside.
  4. Make the dressing by whisking together mayonnaise, sour cream, lime juice, garlic powder, and chili powder. Season with salt and pepper.
  5. In a large bowl, combine chopped vegetables, drained pasta, and seasoned beef. Pour dressing over and toss gently.
  6. Add optional toppings before serving and toss lightly. Chill for 30 minutes if desired.
