Ingredients
  

For the Tofu
  • 14 ounces Firm Tofu pressed and cut for maximum crispiness
  • 2 tablespoons Cornstarch for coating the tofu
  • 2 tablespoons Neutral Oil e.g., Avocado Oil for frying
For the Teriyaki Sauce
  • 1/4 cup Soy Sauce for umami flavor
  • 2 tablespoons Mirin for sweetness
  • 2 tablespoons Sake or water + pinch of sugar
  • 1 tablespoon Sugar to sweeten the sauce
  • 1 tablespoon Sesame Seeds for garnish
For the Rice and Seasoning
  • 1 cup Japanese Short-Grain Rice uncooked
  • to taste Furikake Seasoning for flavor enhancer
For the Cucumber Salad
  • 1 Cucumber thinly sliced
  • 1 tablespoon Rice Vinegar for tanginess
  • 1 teaspoon Sesame Oil for nutty flavor
  • to taste Shichimi Togarashi for garnish
For the Veggies
  • 1 cup Sugar Snap Peas blanched quickly
  • 1 cup Cherry Tomatoes halved

Method
 

Cooking Instructions
  1. Rinse 1 cup of Japanese short-grain rice under cold water until clear, then cook according to package instructions. Fluff rice and sprinkle with furikake seasoning.
  2. Press 14 ounces of firm tofu between plates for 15 minutes, then cut into cubes and coat with cornstarch.
  3. Heat 2 tablespoons of oil in skillet. Pan-fry tofu for 3-4 minutes on each side until golden. Set aside on paper towel.
  4. In the same skillet, reduce heat and add all teriyaki sauce ingredients. Simmer for 5 minutes, then add tofu to coat.
  5. Slice cucumber, toss with rice vinegar, sesame oil, and shichimi togarashi. Let marinate for 10 minutes.
  6. Blanch sugar snap peas for 1-2 minutes, then transfer to ice water.
  7. Assemble bento by placing rice, teriyaki tofu, cucumber salad, sugar snap peas, and cherry tomatoes in compartments.
