- In a small saucepan over medium heat, combine fresh or frozen raspberries with water and optional sugar or maple syrup. Simmer for about 5–7 minutes, mashing the berries until they break down and the mixture thickens slightly. Once done, strain through a fine mesh sieve to remove the seeds, and set the smooth raspberry puree aside to cool completely.
- While the raspberry puree is cooling, prepare your choice of espresso or strong brewed tea. If using espresso, brew a shot using your espresso machine or stovetop method. For tea, steep chai or black tea bags in boiling water for about 5 minutes. Allow the brewed base to cool.
- Grab a tall glass and add about one tablespoon of the cooled raspberry puree to the bottom. Fill the glass with ice cubes, leaving enough space at the top for your brewed espresso or tea. Pour the chilled espresso or tea slowly over the ice.
- Top off the drink with your milk of choice and a splash of vanilla extract. Gently stir to combine all the ingredients.
