Ingredients
  

For the Pasta
  • 2 cups Pasta fusilli, gluten-free, or high-protein varieties
For the Creamy Dressing
  • 1 medium Avocado slightly ripe
  • 1/4 cup Fresh Basil
  • 1/4 cup Fresh Dill
  • 2 tablespoons White Wine Vinegar can substitute with apple cider or rice vinegar
  • 1 clove Garlic fresh
  • 2 tablespoons Nutritional Yeast optional
For the Salad Mix
  • 4 cups Fresh Spinach fresh is best
  • 2 stalks Green Onions for garnish

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions, usually 8-10 minutes, until al dente. Drain and set aside.
  2. Drizzle olive oil in the same pot and toss in a few ice cubes. Stir in the pot for 1-2 minutes to cool the pasta quickly.
  3. In a blender, combine avocado, basil, dill, white wine vinegar, garlic, and nutritional yeast. Blend until smooth and creamy, about 30-45 seconds.
  4. Return cooled pasta to the pot, add spinach and any vegetables like bell peppers or cucumbers. Pour dressing over and toss gently until well-coated.
  5. Slice green onions and sprinkle over the salad. Let rest for about 5 minutes before serving.
