  • 2 cups coconut water or regular coconut water
  • 2 tablespoons fresh lavender fresh is best, dried works in a pinch
For the Mix
  • 1 cup fresh lemon juice soak lemons in warm water for easier juicing
  • to taste honey or agave syrup maple syrup is a good vegan substitute
  • 2 cups carbonated water sparkling or soda water can substitute

Method
 

Step-by-Step Instructions
  1. Begin by gently heating the coconut water in a small saucepan over low heat until just warm, about 5 minutes.
  2. Add fresh lavender and allow it to steep for 10 minutes, then strain the mixture through a fine mesh sieve into a bowl.
  3. In a large pitcher, combine the strained lavender-infused coconut water with freshly squeezed lemon juice and sweetener.
  4. Stir well until the sweetener is fully dissolved.
  5. Refrigerate the mixture for at least 30 minutes to ensure it’s chilled.
  6. Just before serving, add carbonated water and gently stir to combine.
  7. Pour the mocktail over glasses filled with ice and garnish with lemon slices and sprigs of lavender.
