- Begin by gently heating the coconut water in a small saucepan over low heat until just warm, about 5 minutes.
- Add fresh lavender and allow it to steep for 10 minutes, then strain the mixture through a fine mesh sieve into a bowl.
- In a large pitcher, combine the strained lavender-infused coconut water with freshly squeezed lemon juice and sweetener.
- Stir well until the sweetener is fully dissolved.
- Refrigerate the mixture for at least 30 minutes to ensure it’s chilled.
- Just before serving, add carbonated water and gently stir to combine.
- Pour the mocktail over glasses filled with ice and garnish with lemon slices and sprigs of lavender.
