  • 2 cups Spinach Washed and dried
Toppings
  • 1 cup Blueberries Fresh
  • 1 cup Carrots Grated or thinly sliced
  • 1/2 cup Pistachios Chopped
Dressing
  • 3 tablespoons Olive Oil Quality
  • 1/2 cup Lemon Juice Freshly squeezed
Optional Extras
  • 1 tablespoon Fresh Thyme Sprinkled
  • 1 tablespoon Honey To taste

Method
 

Preparation Steps
  1. Wash and dry arugula and spinach thoroughly. Combine in a large salad bowl.
