  • ½ cup Sugar can use coconut sugar

For the No-Bake Filling
  • 1 cup Canned Pumpkin Puree ensure it's pure pumpkin
  • cup Brown Sugar can use white sugar if necessary
  • 1 teaspoon Pumpkin Pie Spice or mix cinnamon, nutmeg, and ginger
  • ½ teaspoon Ground Cinnamon
  • 8 ounces Cream Cheese can use Greek yogurt for lower fat
  • ½ cup Heavy Cream whipping cream can substitute
For Topping
  • to taste Whipped Cream store-bought or homemade

Method
 

Cookie Preparation
  1. Cream together the butter and sugar until light and fluffy. Add egg and vanilla, mixing until incorporated.
  2. Gradually mix in the flour and salt until just combined.
  3. Wrap the dough and refrigerate for 30 minutes.
Baking
  1. Preheat oven to 350°F (175°C). Scoop dough into balls and place on a baking sheet. Press wells into each ball.
  2. Bake for 10-12 minutes and cool on a wire rack.
Filling Preparation
  1. Blend the filling ingredients until smooth and creamy while cookies cool.
  2. Chill filling for 30 minutes.
Assembly
  1. Spoon filling into the wells of cookies. Top with whipped cream and serve.
