Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Whip the room temperature egg whites until soft peaks form, then gradually add icing sugar.
  3. Gently fold in the cornstarch and vanilla extract into the whipped egg whites.
  4. Spoon the meringue onto the prepared circle, creating a decorative border and hollow center.
  5. Bake for 1 hour and 15 minutes to 1 hour and 30 minutes until firm and pale cream.
  6. Let cool in the oven with the door ajar for 2-3 hours or preferably overnight.
  7. Whip the heavy cream until soft peaks form, adding icing sugar and vanilla extract.
  8. Transfer the cooled meringue to a platter, fill the center with whipped cream, and top with berries and mint.
  9. Slice and serve immediately to enjoy this festive dessert.
