Method
 

Preparation Steps
  1. Wash 4-5 ripe peaches, chop them into small pieces, and discard the pits.
  2. Combine chopped peaches, 1 cup of sugar, and 2 cups of water in a medium saucepan.
  3. Place the saucepan over medium-high heat, stirring gently to mix as sugar dissolves.
  4. Bring mixture to a boil, stirring frequently for about 5 minutes.
  5. Reduce heat to medium-low and simmer for 5-10 minutes until peaches are soft.
  6. Remove from heat, cool for about 30 minutes, then strain using a fine mesh sieve.
  7. In a large pitcher, mix strained peach syrup with 1/3 cup lemon juice and 3 cups of cold water.
  8. Stir to combine, taste, and adjust sweetness or tartness if needed.
  9. Serve over ice and garnish with peach slices, lemon slices, and mint.
