For the Sandwich
  • 4 slices Sourdough Bread Any thick, hearty bread or gluten-free options can work.
  • 1/2 cup Cream Cheese Neufchâtel cheese for lower fat content.
  • 1/4 cup Ranch Dressing Homemade ranch as a delightful substitute.
  • 1 tbsp Dried Parsley Fresh parsley is an even better option.
  • 1/2 tsp Garlic Powder Fresh minced garlic can be used.
  • 1/2 tsp Onion Powder Fresh onion works well if sautéed first.
  • 1/4 tsp Kosher Salt Use table salt in a smaller amount if needed.
  • 1 cup Dill Pickles Substitute with bread and butter pickles for a sweeter taste.
  • 1 cup Cheese (such as cheddar) Substitute with melting cheese like mozzarella or Monterey Jack.
  • 2 tbsp Unsalted Butter Olive oil is a tasty alternative for grilling.

Equipment

  • cast-iron skillet

Method

Preparation Steps
  1. Start by patting dry the sliced dill pickles with a kitchen towel to remove excess moisture.
  2. In a small bowl, blend the softened cream cheese with ranch dressing until smooth and creamy.
  3. In another bowl, combine dried parsley, garlic powder, onion powder, and kosher salt.
  4. Place a cast-iron skillet over medium-low heat to preheat.
  5. On two slices of sourdough bread, spread a generous amount of the cream cheese mixture, layer on the dill pickles followed by a slice of your favorite cheese, and top with remaining bread slices. Butter the outer sides of the bread.
  6. Carefully place assembled sandwiches into the preheated skillet. Grill for about 3-5 minutes per side.
  7. Remove sandwiches from the skillet, allow to cool slightly, then slice in half and serve.
