- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine cooked chicken, rice, beans, corn, bell pepper, cumin, and chili powder.
- Spread half of the enchilada sauce in the bottom of the baking dish.
- Layer the chicken mixture and top with remaining enchilada sauce.
- Sprinkle cheddar cheese on top.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes until cheese is bubbly.
- Let cool for 5 minutes before serving.
