Ingredients
  

For the Casserole
  • 2 cups cooked chicken shredded
  • 1 cup rice uncooked
  • 1 can enchilada sauce
  • 1 cup cheddar cheese shredded
  • 1 cup black beans rinsed and drained
  • 1 cup corn canned or frozen
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup bell pepper diced

Method
 

Assembly Instructions
  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine cooked chicken, rice, beans, corn, bell pepper, cumin, and chili powder.
  3. Spread half of the enchilada sauce in the bottom of the baking dish.
  4. Layer the chicken mixture and top with remaining enchilada sauce.
  5. Sprinkle cheddar cheese on top.
  6. Cover with foil and bake for 20 minutes.
  7. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
  8. Let cool for 5 minutes before serving.
