Step-by-Step Instructions
  1. Cook the Pasta: Boil salted water, add pasta, and cook until al dente (8–10 min). Drain and rinse under cold water. Set aside.
  2. Char the Corn: Heat a skillet, add corn, and sauté for 4–5 minutes until lightly charred. Let cool.
  3. Make the Dressing: Combine mayonnaise, sour cream, and lime juice. Whisk, then add spices and whisk again.
  4. Combine Ingredients: Add pasta and corn to the dressing. Toss in tomatoes, onion, cilantro, jalapeño, and Cotija. Mix gently.
  5. Chill the Salad: Cover and refrigerate for at least 30 minutes to let flavors meld.
  6. Serve and Garnish: Stir gently, garnish with Cotija, chili flakes or Tajín, and lime wedges. Serve chilled.
