Preparation
- Preheat the oven to 375°F (190°C).
- Finely dice the onion and parsley, and mince the garlic. Zest and juice the lemon.
- In a large mixing bowl, combine the ground beef, breadcrumbs, egg, parsley, garlic, onion, half of the lemon zest, dried oregano, salt, and pepper.
- Wet your hands and form the mixture into golf ball-sized meatballs.
- In a large skillet, heat olive oil over medium-high heat, then sear the meatballs for 2-3 minutes on each side.
- Add chicken broth to the skillet, along with the remaining lemon zest and juice. Stir to deglaze the pan.
- Return the seared meatballs to the skillet, cover, and let simmer for 15 minutes.
- Taste and adjust the seasoning of the sauce.
- Garnish with chopped parsley and serve hot.
