Ingredients
  

For the Meatballs
  • 1 lb Ground Beef Opt for lean ground beef for a healthier option.
  • 1 cup Breadcrumbs Use gluten-free breadcrumbs if desired.
  • 1 large Egg Acts as a binder.
  • 1/4 cup Parsley Fresh, chopped.
  • 2 cloves Garlic Minced, fresh is best.
  • 1 medium Onion Finely diced.
  • 1 large Lemon Zested and juiced.
  • 1 tsp Dried Oregano Imparts authentic flavor.
  • 1 tsp Salt To taste.
  • 1/2 tsp Black Pepper To taste.
  • 2 tbsp Olive Oil For browning.
For the Sauce
  • 1 cup Chicken Broth Swap with vegetable broth for a vegetarian option.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Finely dice the onion and parsley, and mince the garlic. Zest and juice the lemon.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, parsley, garlic, onion, half of the lemon zest, dried oregano, salt, and pepper.
  4. Wet your hands and form the mixture into golf ball-sized meatballs.
  5. In a large skillet, heat olive oil over medium-high heat, then sear the meatballs for 2-3 minutes on each side.
  6. Add chicken broth to the skillet, along with the remaining lemon zest and juice. Stir to deglaze the pan.
  7. Return the seared meatballs to the skillet, cover, and let simmer for 15 minutes.
  8. Taste and adjust the seasoning of the sauce.
  9. Garnish with chopped parsley and serve hot.
