- Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
- In a mixing bowl, whisk together the large eggs and cottage cheese until smooth.
- Stir in the shredded cheddar cheese, chopped spinach, chives, and seasonings until well combined.
- Pour the mixture into the greased muffin tin cups, filling them about three-quarters full.
- Bake for 18–20 minutes until puffed and lightly golden on top.
- Allow to cool for 5 minutes, then run a knife around the edges and remove from the tin. Serve warm.
