Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
  2. In a mixing bowl, whisk together the large eggs and cottage cheese until smooth.
  3. Stir in the shredded cheddar cheese, chopped spinach, chives, and seasonings until well combined.
  4. Pour the mixture into the greased muffin tin cups, filling them about three-quarters full.
  5. Bake for 18–20 minutes until puffed and lightly golden on top.
  6. Allow to cool for 5 minutes, then run a knife around the edges and remove from the tin. Serve warm.
