Ingredients
  

For the Cocktail
  • 1 pound medium-sized shrimp (31-40 count) Fresh shrimp preferred
  • 1 cup chopped onion Marinate in lime juice for 10 minutes
  • 2 medium Roma tomatoes diced, choose ripe for sweetness
  • 1 medium cucumber diced, substitute with zucchini if desired
  • 1 stalk celery sliced, green bell pepper can be an alternative
  • 1 tablespoon minced jalapeño adjust for spice preference
  • to taste salt
  • to taste black pepper
For the Sauce
  • 1 cup tomato and clam juice cocktail or cocktail sauce for extra flavor
  • 1/2 cup ketchup low-sugar option for health
  • 1/4 cup chopped cilantro substitute with parsley if needed
  • to taste hot pepper sauce optional
For Topping
  • 1 cup diced avocados add before serving, drizzle with lime juice

Method
 

Step 1: Marinate the Onion
  1. In a small bowl, combine the chopped onion with lime juice and let it stand for 10 minutes.
Step 2: Prepare the Shrimp Mixture
  1. In a medium-sized bowl, combine the cleaned medium-sized shrimp with diced Roma tomatoes, cucumber, sliced celery, minced jalapeño, salt, and pepper. Mix well.
Step 3: Whisk Together the Sauce
  1. In another bowl, whisk together the tomato and clam juice cocktail, ketchup, chopped cilantro, and hot pepper sauce.
Step 4: Combine Mixtures
  1. Pour the sauce over the shrimp mixture and stir gently until everything is well coated.
Step 5: Fold in Avocados and Onions
  1. Gently fold in the diced avocados and marinated onion mixture.
Step 6: Chill for Flavor
  1. Cover the mixture and place it in the refrigerator to chill for at least one hour.
