Step-by-Step Instructions
  1. In a food processor, combine the defrosted frozen peas, optional pea shoots, grated Parmesan, olive oil, lemon juice, and half a clove of garlic. Pulse until you achieve a rough paste.
  2. Preheat your broiler or grill to high heat. Slice the ciabatta bread into thick pieces and arrange on a baking sheet, then drizzle with olive oil. Toast for 2-3 minutes on each side until golden brown.
  3. Rub the cut side of the remaining clove of garlic over the warm toasted ciabatta.
  4. Spread the pea topping evenly over each slice of toasted ciabatta.
  5. Sprinkle extra grated Parmesan on top, zest fresh lemon peel, and drizzle olive oil. Finish with cracked black pepper.
