- In a food processor, combine the defrosted frozen peas, optional pea shoots, grated Parmesan, olive oil, lemon juice, and half a clove of garlic. Pulse until you achieve a rough paste.
- Preheat your broiler or grill to high heat. Slice the ciabatta bread into thick pieces and arrange on a baking sheet, then drizzle with olive oil. Toast for 2-3 minutes on each side until golden brown.
- Rub the cut side of the remaining clove of garlic over the warm toasted ciabatta.
- Spread the pea topping evenly over each slice of toasted ciabatta.
