Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine 1 cup of plain Greek yogurt with 1/2 cup of peanut butter. Blend until creamy and smooth, approximately 2-3 minutes.
  2. Spoon the mixture into a silicone mold or ice cube tray, filling compartments about three-quarters full. Smooth the tops with a spatula.
  3. Freeze for at least 2 hours or until firm. Check that the bites hold their shape upon gentle pressure.
  4. Melt about 1/2 cup of dark chocolate in a microwave-safe bowl. Dip half of each frozen bite in the melted chocolate, allowing excess to drip off.
  5. Return the chocolate-dipped bites to the freezer for an additional 30 minutes to set the chocolate.
  6. Once frozen, transfer the bites to an airtight storage bag or container and label with the date. Store in the freezer for up to 2 weeks.
