- In a mixing bowl, combine 1 cup of plain Greek yogurt with 1/2 cup of peanut butter. Blend until creamy and smooth, approximately 2-3 minutes.
- Spoon the mixture into a silicone mold or ice cube tray, filling compartments about three-quarters full. Smooth the tops with a spatula.
- Freeze for at least 2 hours or until firm. Check that the bites hold their shape upon gentle pressure.
- Melt about 1/2 cup of dark chocolate in a microwave-safe bowl. Dip half of each frozen bite in the melted chocolate, allowing excess to drip off.
- Return the chocolate-dipped bites to the freezer for an additional 30 minutes to set the chocolate.
- Once frozen, transfer the bites to an airtight storage bag or container and label with the date. Store in the freezer for up to 2 weeks.
