- Preheat your oven to 375°F (190°C). Grease a baking dish with nonstick spray.
- In a skillet over medium heat, sauté the diced onions for about 5 minutes until soft and translucent.
- In a large mixing bowl, combine the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese. Mix gently.
- Shape the mixture into a loaf about 8 inches long and place it into the greased baking dish.
- Sprinkle the remaining grated Parmesan cheese and optional toppings over the top.
- Bake for 45-50 minutes, checking for a temperature of 165°F (74°C) with a meat thermometer.
- Let the meatloaf rest for about 10 minutes, then slice and serve warm.
