For the Meatloaf
  • 1 pound Ground Chicken Can substitute with ground turkey or lean pork.
  • 1 cup Parmesan Cheese Rich, nutty flavor.
  • 1 cup Panko Breadcrumbs Regular breadcrumbs can be substituted.
  • 2 large Eggs Essential for binding.
  • 3 cloves Minced Garlic Adjust to taste.
  • 1 teaspoon Garlic Powder For enhanced garlic flavor.
  • 1 teaspoon Onion Powder Adds sweet, savory depth.
  • 1 teaspoon Dried Basil Can be swapped for fresh.
  • 1 teaspoon Dried Parsley Can be swapped for fresh.
  • 1 teaspoon Salt Adjust to your liking.
  • 1/2 teaspoon Black Pepper Adjust to your liking.
  • 1/2 cup Whole Milk Plant-based milk can be used.
  • 2 tablespoons Unsalted Butter Adds richness.
For the Glaze
  • 2 tablespoons Unsalted Butter For the glaze.
  • 1/4 cup Additional Parmesan To fortify the glaze.
  • 2 tablespoons Fresh Parsley For garnish.

Method
 

Instructions
  1. Preheat your oven to 190°C (375°F) and prepare a baking sheet or greased loaf pan.
  2. In a large mixing bowl, combine ground chicken, Parmesan cheese, breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, and dried parsley. Pour in whole milk, and season with salt and pepper.
  3. Shape the mixture into a loaf on the prepared baking sheet or in greased loaf pan.
  4. Place the shaped meatloaf in the preheated oven and bake for 40-45 minutes.
  5. While baking, melt unsalted butter in a saucepan, add minced garlic, and sauté until fragrant. Stir in additional Parmesan cheese and fresh parsley until the mixture thickens.
  6. Remove the meatloaf from the oven after 40-45 minutes and brush the garlic Parmesan glaze over the top.
  7. Return the glazed meatloaf to the oven for an additional 5-7 minutes.
  8. Let the meatloaf rest for 5 minutes before slicing and garnish with fresh parsley.
