- Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
- Wash and slice the sweet potatoes into wedges about 1 inch thick.
- Combine olive oil, minced garlic, smoked paprika, onion powder, salt, black pepper, and red pepper flakes in a bowl to create a seasoning mixture.
- Toss the sweet potato wedges with the seasoning mixture until evenly coated.
- Sprinkle half of the grated Parmesan cheese over the wedges and toss again.
- Arrange the wedges in a single layer on the baking sheet and bake for 25-30 minutes, flipping halfway through.
- Remove from oven, sprinkle remaining Parmesan cheese and chopped parsley on top, and serve immediately.
