  • 1 teaspoon dried thyme or use fresh thyme

  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste
For the Finish
  • 2 tablespoons balsamic vinegar
  • 1/4 cup freshly grated Parmesan cheese consider a vegan alternative for dairy-free

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine broccoli, carrots, red bell pepper, zucchini, and red onion. Toss gently to mix.
  3. Sprinkle minced garlic, olive oil, thyme, rosemary, salt, and pepper over the vegetables and toss to coat.
  4. Spread the vegetables on the baking sheet in a single layer without overcrowding.
  5. Roast for 20-25 minutes, stirring halfway, until golden brown and tender.
  6. Remove from the oven, drizzle with balsamic vinegar, and toss gently to coat.
  7. Transfer to a serving platter and sprinkle with Parmesan cheese before serving.
