- Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin.
- In a large bowl, whisk together 8 eggs until fully combined.
- Sauté diced onions and mushrooms in oil over medium heat for about 5 minutes.
- Add sautéed vegetables, spinach, and bell peppers into the egg mixture and fold gently.
- Stir in shredded cheese and crumbled feta until evenly mixed.
- Pour the mixture into muffin cups, filling each about ¾ full.
- Bake for 16-20 minutes until the tops are golden brown and a toothpick comes out clean.
- Remove from oven, cool for 5 minutes, then transfer to a rack.
