Equipment

  • medium bowl
  • Cutting board

Method

Cooking Instructions
  1. Begin by laying the thinly sliced beef bacon in a cold, large skillet. Turn the heat to medium and cook for 8-10 minutes, flipping occasionally until the bacon is golden brown and crispy. Transfer the bacon to a paper towel-lined plate to drain excess grease.
  2. While the bacon cools, wash and thoroughly dry the lettuce. Slice the heirloom tomatoes evenly for added sweetness. If using avocado, slice it just before assembly. Thinly slice the red onion.
  3. In a medium bowl, combine mayonnaise, apple cider vinegar, sweetener, and smoked paprika. Whisk until smooth and let the sauce sit for at least 10 minutes.
  4. If desired, warm the tortillas in a dry skillet over low heat for 30 seconds on each side. Spread a layer of the secret sauce on a tortilla, then layer with lettuce, tomatoes, bacon, avocado, and red onion. Roll tightly and slice in half.
  5. Serve immediately for the best flavor. These wraps pair well with a green salad or sweet potato fries.

Notes

Consider using 'burrito size' tortillas for easier assembly and to hold everything without tearing. Ensure the beef bacon is cooked until very crispy for the best texture.
