- In a shallow bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, honey, and minced garlic. Season with salt and pepper. Add chicken to the marinade and let rest for 10-12 minutes.
- Slice provolone and mozzarella cheese. Brush the insides of the rolls lightly with olive oil.
- Preheat grill or grill pan. Place a slice of provolone on each roll, add marinated chicken, sprinkle with basil and thyme, and close the sandwich.
- Cover grill and cook sandwiches for 2-3 minutes, or until cheese is melted and bread is golden brown.
- Remove from grill, let rest for 1-2 minutes, then cut diagonally and serve hot.
