  • 1 medium White Onion, Minced Shallots can be a milder substitute.
  • 1 teaspoon Salt Adjust to suit your taste.
  • 1 teaspoon Pepper Adjust to suit your taste.
  • 1 teaspoon Cumin Swap for paprika to change the spice profile.
  • 1 teaspoon Dried Oregano Fresh oregano can be used if available.
For Serving

Method
 

Preparation Steps
  1. In a large mixing bowl, combine orange juice, grapefruit juice, lime juice, and olive oil. Add minced garlic, white onion, salt, pepper, cumin, and dried oregano. Whisk together until well blended.
  2. Place the whole cut-up chicken into a container and pour 3/4 of the marinade over it. Cover and refrigerate for at least 24 hours.
  3. Set aside the remaining 1/4 of the marinade in a small bowl for basting during grilling.
  4. Preheat your grill to 400°F, setting it up for dual-zone cooking.
  5. Place the marinated chicken pieces skin-side down over indirect heat. Baste with reserved marinade every 5 minutes.
  6. After 20 minutes, move the chicken to direct heat, continue basting, and cook until the internal temperature reaches 160°F.
  7. Remove from the grill and let the chicken rest for about 10 minutes.
  8. Serve alongside Balsamic Tomato Salad.
