Preparation Steps
- In a large mixing bowl, combine orange juice, grapefruit juice, lime juice, and olive oil. Add minced garlic, white onion, salt, pepper, cumin, and dried oregano. Whisk together until well blended.
- Place the whole cut-up chicken into a container and pour 3/4 of the marinade over it. Cover and refrigerate for at least 24 hours.
- Set aside the remaining 1/4 of the marinade in a small bowl for basting during grilling.
- Preheat your grill to 400°F, setting it up for dual-zone cooking.
- Place the marinated chicken pieces skin-side down over indirect heat. Baste with reserved marinade every 5 minutes.
- After 20 minutes, move the chicken to direct heat, continue basting, and cook until the internal temperature reaches 160°F.
- Remove from the grill and let the chicken rest for about 10 minutes.
- Serve alongside Balsamic Tomato Salad.
