  1. Preheat your oven to 375°F (190°C). Gather and prepare your ingredients.

  3. Mix in diced onion and bell pepper. Sauté for an additional 5 minutes.
  4. Stir in fresh spinach or kale, allowing to wilt for 2-3 minutes.
  5. Combine the turkey-vegetable mixture with cubed sweet potatoes in a large mixing bowl.
  6. Transfer to a greased baking dish. Top with cheddar and mozzarella cheese.
