Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. In a large bowl, toss sliced sweet potatoes with olive oil until fully coated.
  3. Combine garlic powder, onion powder, ground cumin, smoked paprika, dried oregano, chili powder, and cayenne pepper in a bowl and sprinkle over the sweet potatoes, tossing gently.
  4. Spread seasoned sweet potatoes on baking sheets, season with salt and pepper, and bake for 15 minutes.
  5. Flip the slices and roast for another 15 minutes until golden brown and crispy.
  6. Transfer roasted sweet potatoes to one sheet, add black beans and cheddar cheese, and bake for an additional 10 minutes.
  7. Garnish nachos with jalapeno slices, green onions, pico de gallo, and drizzle with avocado cilantro crema.
