  • 2 Mashed Ripe Banana about 2 large or 3 small bananas
  • 1 1/2 cups All-Purpose Flour or gluten-free flour blend
  • 2 tsp Baking Powder
  • 1/2 tsp Sea Salt
  • 1 cup Semi-Sweet Chocolate Chips or dark chocolate chips

Preparation Steps

  2. In a mixing bowl, combine cottage cheese, maple syrup, vanilla extract, melted coconut oil, and room-temperature eggs. Blend until smooth.
  3. In a separate bowl, whisk together mashed banana, flour, baking powder, and sea salt until no lumps remain.
  4. Carefully combine the wet ingredients into the dry mixture, stirring gently.
  5. Fold in the chocolate chips, ensuring even distribution.
  6. Fill each muffin cup, leaving about ¼ inch space at the top.
  7. Bake for 22-25 minutes until golden brown and a toothpick comes out clean.
  8. Cool the muffins in the pan for 5 minutes before transferring to a wire rack.
