  • 1/2 cup Nut Butter almond, peanut, or sunflower seed butter for nut-free
  • 1/4 cup Cocoa Powder dark cocoa for richer taste
  • 2 tablespoons Honey or maple syrup for vegan
  • 1 cup Unsweetened Coconut Flakes can swap with finely chopped nuts
Optional Coating
  • 1/4 cup Extra Coconut Flakes for rolling
  • 2 tablespoons Cocoa Powder for dusting

Method
 

Step-by-Step Instructions
  1. Soak the pitted dates in a bowl covered with warm water for about 10 minutes.
  2. Drain and transfer the softened dates to a food processor along with nut butter, cocoa powder, and honey; blend until smooth.
  3. Stir in the unsweetened coconut flakes until evenly distributed throughout the mixture.
  4. Transfer the mixture into a bowl, cover with plastic wrap, and refrigerate for 15-30 minutes.
  5. Roll the chilled mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  6. Optionally, roll each truffle in extra coconut flakes or cocoa powder.
  7. Place truffles back in the refrigerator for another 30 minutes to set completely.
