- Drain and transfer the softened dates to a food processor along with nut butter, cocoa powder, and honey; blend until smooth.
- Stir in the unsweetened coconut flakes until evenly distributed throughout the mixture.
- Transfer the mixture into a bowl, cover with plastic wrap, and refrigerate for 15-30 minutes.
- Roll the chilled mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Optionally, roll each truffle in extra coconut flakes or cocoa powder.
- Place truffles back in the refrigerator for another 30 minutes to set completely.
