Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your baking dish and all ingredients.
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onions for about 5 minutes.
  3. Blend in minced garlic and cook for an additional minute.
  4. Add sliced mushrooms and sauté until browned, about 8 to 10 minutes. Season with thyme, oregano, salt, and pepper. Optionally add white wine.
  5. Next, add halved grape tomatoes and cook for another 2 to 3 minutes until softened.
  6. In a medium saucepan, melt butter and whisk in flour for 2 to 3 minutes until light golden.
  7. Gradually pour in warmed milk, whisking constantly until the sauce thickens, about 5 to 7 minutes. Season with nutmeg, salt, and pepper.
  8. Cook lasagna noodles according to package instructions until al dente, about 8 to 10 minutes.
  9. Assemble lasagna in a baking dish by layering Bechamel, noodles, mushroom-tomato mixture, spinach, and cheese. Repeat layers.
  10. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 20 minutes.
  11. Let rest for 10 minutes before serving to enhance presentation.
