Ingredients
  

Dressing
  • ½ cup mayonnaise substitute Greek yogurt for a lighter option
  • 2 tablespoons chopped fresh basil oregano or parsley can be used as alternatives
  • 1 tablespoon red wine vinegar apple cider vinegar can be used instead

  • 1 can (about 5 oz) solid white tuna in water canned chicken or leftover cooked chicken can be used instead

Method
 

Preparation Steps
  1. In a large mixing bowl, whisk together ½ cup of mayonnaise, 2 tablespoons of chopped fresh basil, 1 tablespoon of red wine vinegar, and a pinch of salt and pepper for about 1 minute.
  2. To the bowl with the dressing, add 4 cups of shredded Romaine lettuce, 1 diced cucumber, 1 cup of drained chickpeas, 1 cup of halved cherry tomatoes, 1 cup of diced celery, and ½ cup of diced pickles. This will take about 2-3 minutes.
  3. Carefully flake in 1 can of solid white tuna, making sure to drain it well. Gently fold the tuna into the vegetable mix for about 1 minute.
  4. Using two large spoons, gently toss all the ingredients together until well mixed for about 1-2 minutes.
  5. Taste the salad and adjust the seasoning as needed, adding more salt and pepper if desired for about 30 seconds.
  6. Cover the Herbed Tuna Salad and let it chill in the refrigerator for at least 30 minutes.
  7. When ready to serve, scoop the chilled salad onto plates and consider garnishing with fresh basil or a slice of lemon.
