Preparation Steps
- In a large mixing bowl, whisk together ½ cup of mayonnaise, 2 tablespoons of chopped fresh basil, 1 tablespoon of red wine vinegar, and a pinch of salt and pepper for about 1 minute.
- To the bowl with the dressing, add 4 cups of shredded Romaine lettuce, 1 diced cucumber, 1 cup of drained chickpeas, 1 cup of halved cherry tomatoes, 1 cup of diced celery, and ½ cup of diced pickles. This will take about 2-3 minutes.
- Carefully flake in 1 can of solid white tuna, making sure to drain it well. Gently fold the tuna into the vegetable mix for about 1 minute.
- Using two large spoons, gently toss all the ingredients together until well mixed for about 1-2 minutes.
- Taste the salad and adjust the seasoning as needed, adding more salt and pepper if desired for about 30 seconds.
- Cover the Herbed Tuna Salad and let it chill in the refrigerator for at least 30 minutes.
- When ready to serve, scoop the chilled salad onto plates and consider garnishing with fresh basil or a slice of lemon.
